PROTEASE (ACID/NEUTRAL)

UNIT DEFINITION

One protease unit (U) is defined as the amount of protease hydrolyzing casein substrate into 1μg amino acid with phenol-base (like tyrosine, tryptophan) in one minute under 40°C and pH 3.0 or pH7.2 (pH3.0 for acid protease while pH 7.2 for neutral protease).
