WORK MECHANISM

Xylosidase (1,4-β-D-xylosidase, b xylan hydrolase is the major xylanase (endo-1,4-β-D-xylanase, EC 3.2.1.8) and EC 3.2.1.37). Xylanase (1,4-D-xylanase) hydrolysis of xylan internal 1,4 - xylosidase hydrolysis and the small xylan as xylose oligosaccharides (5 carbon sugar) . α-D-glucoside chain poly-wood, and then release wood - oligosaccharides.
Xylanase can decompose insoluble xylan in flour to improve taste of bread.

UNIT DEFINITION

Under certain conditions, the amount of enzyme needed in hydrolyzing xylan to produce 1ug of xylose in one minute.
