WORK MECHANISM

Middle temperature can hydrolyze starch, glycogen and internal α-1, 4 glucosidic bond at higher temperature to produce soluble dextrin and oligosaccharides so that the colloidal solution of starch viscosity decreased rapidly. If hydrolyzed completely, glucose and maltose will be produced also.

UNIT DEFINITION

The amount of enzyme needed to produce 1 umole phosphorus from phytic acid in one minute at specified conditions.

USAGE METHOD

Add middle temperature amylase at the rate of 4-8 U/g together with calcium Ca2+ at a concentration of 60 mg/L. The dosage should be decided through experiments according to the real objective conditions.

Stored in a cool dry place and avoid direct sunlight for 12 months.
